BBQ Sauces I made this weekend. Good stuff!

Vinegar Based BBQ Sauce (North Carolina)

INGREDIENTS (small batch 1 1/4 cups)

* 1 cup cider vinegar
* 1 tablespoon salt (WOW this is a lot of salt, I just use 1 teaspoon)
* 1/2 teaspoon cayenne pepper
* 1 teaspoon crushed red pepper flakes
* 1 tablespoon brown sugar

DIRECTIONS

In a small bowl, combine the vinegar, salt, cayenne pepper, crushed red pepper flakes and brown sugar. Mix well and allow ingredients to mesh for about 4 to 8 hours before using.

South Carolina BBQ Sauce

INGREDIENTS (3 cups)

* 1 1/2 cups prepared yellow mustard
* 1/2 cup packed brown sugar
* 3/4 cup cider vinegar
* 3/4 cup beer
* 1 tablespoon chili powder
* 1 teaspoon freshly ground black pepper
* 1 teaspoon freshly ground white pepper
* 1/2 teaspoon cayenne pepper
* 1 1/2 teaspoons Worcestershire sauce
* 2 tablespoons butter, room temperature
* 1 1/2 teaspoons liquid smoke flavoring (I do honey over liquid smoke, totally different but I like it.)
* 1 teaspoon Louisiana-style hot sauce, or to taste

DIRECTIONS

1. In a heavy non-reactive saucepan, stir together the mustard, brown sugar, vinegar, and beer. Season with chili powder and black, white, and cayenne peppers. Bring to a simmer over medium-low heat, and cook for about 20 minutes. DO NOT BOIL, or you will scorch the sugar and peppers.

2. Mix in the Worcestershire sauce, butter, and liquid smoke. Simmer for another 15 to 20 minutes. Taste, and season with hot sauce to your liking. Pour into an airtight jar, and refrigerate for overnight to allow flavors to blend. The vinegar taste may be a little strong until the sauce completely cools.

Been a long time gone

I'm starting to think that Twitter is killing the personal blog. Seems that I have been making more updates to my Facebook and Twitter page then the blog that I personally maintain. odd?

So, the other day I was totally obsessed with the videos produced by http://www.checkpointusa.org/ and posted on YouTube. The basic plot of the videos is that this guy disagrees with the U.S. Border Patrol check points located within the boards. Apparently, check points can be setup within 100 miles of a border. Now I'm not sure that I totally agree with what this guy is doing (and how he is doing it), but I really do think he has a point. If your looking to kill sometime check out the below video as well as the other ones this user has posted on YouTube.

If you're happy i'm

Rudolf the red nosed reindeer is playing on TV and I'm sitting in front of our new Christmas tree getting in the Christmas mood. This year we purchased a 12 foot tree to place in the living room....yeah it may be a tad bit too big, but it's fun. Hope everyone had a wonderful Thanksgiving and are enjoying the Holiday season.

So Regina and I are planning another trip. This time to Canada where we will stay at the hotel de glace an all ice hotel. Now I'm not a big fan of cold weather, but come on this sounds crazy enough for me to check out. Now when I say all ice hotel I'm talking ALL ice. The beds, bar, chairs, rooms, everything....all ice. We booked the hotel for some weekend in February and are both very excited.


So I know I haven't posted in awhile so I thought I would end with a Hack I read about. As soon as I showed the hack to Regina she was sharing it with everyone...it's a pretty easy useful one if you have a Comcast DVR.


Comcast remote hack
(aka how to program the remote to skip ahead 30 seconds on recordings):
-Choose an unused button on the "silver" remote, "A button" is a good one to pick.
-Press the "Cable" button at the top of the remote.
-Press and hold the "Setup" button until the "Cable" button blinks twice.
-Type in the code 994. The "Cable" button will blink twice.
-Press (do not hold) the "Setup" button.
-Type in the code 00173.
-Press the button you want to map the 30-second skip command to.
